Someone wrote an article on how not to ruin a non-stick pan. And someone else wrote about the many ways we can succeed in ruining non-stick cookware, basically by cooking and cleaning in all the typical ways. Can't turn up the heat -- where's the fun in that?
With non-stick, conscious care is needed. So: cook on lower heat; never use metal utensils; never scrub when washing; take care when storing them; finally, always be gentle.
These recent tutorials on caring for non-stick cookware make my own case for preferring honest metal, such as Stainless Steel. Here's the thing: when you're cooking with quality Stainless Steel, just go ahead and cook. Finally, I am not saying keep non-stick out of your llife. For variety, have a few pieces in addition to your stainless. But really - if you want to use less oil, just use less oil!
I don't know how people world-wide would get along without metal cookware. Metal is reliable. Great Stainless Steel, mixed with alloys and other metals are available to us. Cuisinart has its own finely developed Stainless Steel cookware that you can enjoy for boiling, sauteing, frying, sizzling, grilling, roasting, soupmaking and whatever else you do to cook up some good tasting food. After cooking you can wash, scrub, stack however you need to.
I'm including a picture here of a really nice 10 piece Cookware Set by Cuisinart. that can be bought from Amazon.com. This set includes one 8 inch and one 10 inch Skillet, two different size Saucepans with covers, a nice Saute Pan with Cover and a great 8 qt. Stockpot with Cover.
Take a look -click on the picture. It's a worthy gift as well.
Finally, I am including a favorite recipe, great for big pot cooking.
CHILE MOLE
2 Tbsp Olive Oil
1 1/2 lbs Ground Beef
1 medium to large Onion, chopped
2 Tbsp Chile Powder, 1 Tbsp Cumin, Salt & Pepper to taste
About 1 Cup Sliced Mushrooms
1 28 oz can Tomatoes, crushed and undrained
1 28 oz can diced Tomatoes, undrained
1 small can Tomato Paste
1 large can Pinto Beans, seasoned or not
1 oz unsweenened Baking Chocolate, chopped
Tenderly saute the onion and the beef until gently cooked. Add all the seasonings, including the chocolate and simmer for a minute or two. Add the mushrooms and the tomatoes and stir well. Finally add the Beans.
Cover and cook very gently for 40 minutes to an hour.
This is a tasty one-pot meal. Side dishes can include green salad with black olives, and tortillas.
I welcome your comments.
